Cuban Pork Fried Rice

SERVES 2-4 AS MAIN, 4-6 AS SIDE

This recipe uses leftover Cuban-style roast pork shoulder as the main protein, but frankly you could use any sort of protein you want!

  • 2 Chinese Sausages, Cut Into Strips
  • 2 Shallot, Sliced Lengthways
  • ½ Cup Snow Peas, Cut Into Strips
  • ½ Cup Bean Sprouts
  • 2 Eggs, Whisked
  • 1 Red Bell Pepper, Cut Into Strips
  • 1 Green Bell Pepper, Cut Into Strips
  • 2 Tsp. Soy Sauce
  • 1 Tbsp + 2 Tsp. Sesame Oil, Divided
  • 2 Tsp. Oyster Sauce
  • 2 Clove Garlic, Minced Fine
  • 1 1-Inch Knob Ginger, Minced Fine
  • 2 Cup Leftover Rice, Loosened 
  • 1 Tsp Cumin
  • 1 Tsp Dried Oregano

PREP

  • Thinly slice the shallot, snow peas, and bell pepper; set aside.
  • Finely mince the ginger and garlic; set aside.
  • Crack the eggs into a small bowl and whisk lightly; set aside.
  • Slice the Chinese sausage on a bias, then cut into thin strips; set aside.
  • Measure out the shredded leftover pork; set aside.
  • Break up the cooked rice with your hands so the grains are loose and well separated; set aside.

COOK

  • Heat a wok or large skillet over high heat. Add 1 teaspoon sesame oil, then add the Chinese sausage and pork. Cook, stirring, just until warmed through. Transfer to a bowl.
  • Add the eggs to the pan and cook quickly, stirring, until just set, about 10 seconds. Transfer to the bowl with the meat.
  • Add another teaspoon sesame oil to the pan and add the shallot. Cook, stirring, for about 30 seconds.
  • Add the snow peas, bean sprouts, and bell pepper and cook briefly, stirring, until just tender-crisp, about 30 seconds. Add the garlic and ginger and cook until fragrant, about 10 seconds. Transfer vegetables to the bowl with the meat and eggs.
  • Add the remaining 1 tablespoon sesame oil to the pan. Add the rice and cook, pressing and stirring, until heated through.
  • Drizzle the soy sauce around the edges of the pan and let it sizzle and caramelize slightly before stirring it into the rice. Stir in the oyster sauce.
  • Return the reserved meat, eggs, and vegetables to the pan and stir-fry until everything is evenly combined and heated through. Serve immediately.
